Almost sterile underground seawater is pumped up from about 40 meters underground on the premises of Lake Hamana, and high-quality, fatty flounder are grown from fry to young fish over a period of about a year and a half, fed with live bait passed down from the previous generation. At the processing plant attached to the farm, we perform the ``Tsumoto-style ultimate blood removal'' to bring out the flavor. Our company has been certified by the Shizuoka Agriculture and Fisheries Certification, which is the prefecture's certification of producers' safety and security efforts, and we deliver delicious flounder.
