Producer interview

Established in 3, Iwasei handles everything in-house, from purchasing fresh fish at Ogawa Port in Yaizu to freezing, manufacturing, storage, and sales. 190 years since our founding, "delicious, safe, and safe" has always been the origin of food. We continue to evolve under the theme of "tradition and innovation."

The main product, ``Salted mackerel'', is mainly shipped to the Kansai area as an ingredient for pressed sushi. Each piece is carefully hand-cut by skilled craftsmen, and the flavor is condensed using a unique manufacturing method. This is a masterpiece that won the Minister of Agriculture, Forestry and Fisheries Award and is also dedicated to Meiji Shrine.

It is recommended not only for grilled fish that simply tastes the ingredients, but also for Western-style dishes such as aqua pazza and paella.

In addition, ``Shimesaba'' was highly praised for its skillful combination of salt and vinegar and the beautiful finish, and received the Fisheries Agency Director's Award. Since it is sliced, it is easy to arrange it, and it can be used not only for standard mackerel sushi but also for marinades and salads.

The ``Salted Bonito Fish'' and ``Squid Shirozukuri'' are made with time and effort, and have a reputation for being addictive because of their unique taste, which goes well with the rice and alcohol.

Fashionable products such as ``Saba Marinade'' and ``Sabaliet'', which are perfect as snacks for wine, are being created one after another.

In recent years, "Yaizu Saba Ramen" has become popular overseas as well. Received the Gold Award in "Fuji no Kuni New Product Selection 2019". This healthy ramen comes in soy sauce and miso flavors, and contains no chemical seasonings or preservatives, no added oil, and only the natural fat of the mackerel. Mackerel is kneaded into not only the soup but also the noodles, giving it plenty of concentrated mackerel flavor.

It does not contain umami seasonings, meat, or alcohol, and is also halal-friendly. It is ideal for providing inbound menus as it does not require religion.

Iwasei proposes distinctive main dishes using seasonal fresh fish, salted mackerel and shime mackerel, and introduces commercial ramen soups. In the future, they would like to focus on proposing ingredients for inbound tourists, collaborating on recipes using commercial seasonings, original products, and OEM.
