This bento uses Fuji Atlantic Salmon, Japan's first domestically produced salmon, raised in a land-based farm in Oyama Town, Sunto District, Shizuoka Prefecture. The salmon cutlet is sandwiched between shiso leaves and cheese and served with a mellow Izu miso-based sauce. Salmon flakes mixed with tencha tea and white sesame peek out from underneath the cutlet. The salmon sushi is presented in the style of chirashi sushi with shredded egg and chopped shiitake mushrooms, accented with stems of wasabi from Izu Amagi.
