It is a large perennial plant of the Umbelliferae family that grows wild in Nishi-Izu and Minami-Izu, and its leaves and stems are mainly eaten in sesame dressings and tempura.
Because it has a unique taste, cooking methods are used to eliminate the taste, such as tempura, stir-fry with butter, ohitashi, and mayonnaise dressing.
Particularly on Izu Oshima, tempura, fried Ashitaba in camellia oil, is a specialty dish.
The name comes from the fact that it grows so fast that it is said that "even if you pile it up today, young leaves will grow tomorrow."
Nowadays, there are very few native species.
