Gennari sushi is a type of sushi made in Inatori, Izu on celebratory days such as ``Shugon (wedding)'', ``Tatemae (construction ceremony)'', ``Fune-ojishi'' (launching ceremony), Shichi-Go-San, and coming-of-age ceremony. It is said that the name comes from the fact that each piece is so large that if you eat one, you'll go crazy.

Inatori's alfonsino fishing began in the Meiji era. A traditional dish for special occasions in this area is this pressed sushi topped with red and white minced alfonsino (locally called oboro).

In addition to the splendid alphonsine, they also make a set of gennari sushi, which includes lean tuna, simmered shiitake mushrooms, and rolled egg pressed sushi.

Ingredients used

Alfonsino, carrot, rice

How to eat

The vinegared rice is stuffed with shredded, sweetly boiled carrots and pressed into a mold, then removed from the mold and topped with alfonsino oboro. Sometimes a set is made with pressed sushi topped with lean tuna, boiled shiitake mushrooms, and rolled egg.
