The Kamo family has been a headman since the Momoyama period. Shoya cuisine is a traditional dish of the Kamo family that has been made since the Edo period. Inheriting the original manufacturing method, no additives are used. The rice bowl is centered around ``someii'' rice, which is dyed a golden color with quince berries, and is filled with simmered dishes, pickles, ganmodoki, soy sauce berries, and more. Charabuki (tsukudani of butterbur) uses butterbur picked in the nearby fields and mountains in the spring, and the pickles are prepared in the garden according to the season. The miso for the miso soup is also homemade. Our dishes are made with ingredients that have been carefully prepared over the years, with an emphasis on authenticity.
