Nanao takuan is a pickled radish made from ``Nanao daikon'', a radish specially used for pickles, which is grown in the volcanic ash soil of the scenic Hakone Mountains in Izu. Nanao Takuan Asajiro-zuke is pickled using the inaka-zuke method (drying in the sun for about three weeks in the sea breeze blowing from the sea, and pickling for three years with just salt and rice bran). When you cut it into 1.5 to XNUMX mm pieces and put it in your mouth, you will first feel a strong salty taste, but as you chew it thoroughly, you will enjoy the sweetness of the dried radish and the deep flavor of the repeated fermentation.
