A traditional home-cooked dish that is unique to each household in the Gotemba region.
On auspicious days such as celebrations and festivals, it is customary to eat homemade "Mikuriya Soba" as a feast with relatives and neighbors.
Because buckwheat and wheat were grown in abundance in this region, farmers would make their own soba noodles using Japanese yam and wild yam without using water, and would then serve them with soba sauce made from chicken stock.
The soba noodles have a simple taste, and the yam in them makes them easy to swallow. The soup stock is made from chicken bones, and the toppings include chicken, carrots, and shiitake mushrooms.
It is served as a treat to guests at home on New Year's Eve, New Year's Day, and other special occasions.

How to eat
Bring bite-sized pieces of chicken, shredded carrots and shiitake mushrooms to a boil in soup stock, then season with soy sauce, sugar and salt. Pour this soup over soba noodles before eating.
