Yuzu rice cake (Yubeshi) is a dried food made by stuffing homemade miso, walnuts, sesame seeds, etc. into a yuzu fruit and leaving it to ripen.
Its origins are said to date back to the Genpei period, and it is known as the ``taste of Hokuen'' and is a specialty of Sakuma Town.
It has a distinctive aroma of yuzu, miso, and other flavors, and is popular as an accompaniment to alcohol, preserved food, and portable food.
