Unique to Shizuoka! A series introducing famous restaurants that offer surprising menus using ingredients from around the world.
This time, we would like to introduce a cafe that was planned together with the town of Kawanehon to convey the charm of the town and the revitalization of the area after moving to Kawanehon.
``folk knot cafe STIR'' is located in front of Oigawa Railway Senzu Station. Since it is located in a location where many tourists visit for steam locomotives, many customers visit this cafe while waiting for the train. We spoke to Ayumi Obuchi and Hikaru Kanno, who run the shop and have moved to Kawanehon Town.
Kawanehon Town is also a yuzu production area that boasts one of the highest production volumes in the Tokai region. Yuzu from Kawanehoncho is characterized by its thicker skin than regular yuzu. It is said that the natural environment suitable for yuzu cultivation, such as the temperature difference and sunshine hours unique to the highlands of 200 to 600 meters above sea level, produces high-quality yuzu.
``folk knot cafe STIR'' proposes using yuzu from Kawanehon Town to convey the charm of the town and to use it in delicious sweets and dishes.
Companies and stores in Kawanehon Town, such as "folk knot cafe STIR" and "KAWANE SENSE," are developing a variety of products using yuzu from Kawanehon Town. ``Yuzu ponzu sauce'', ``Yuzu powder from Kawanehon Town'', ``Essential oil'', ``Yellow yuzu pepper'', ``Chilled yuzu amazake'', ``KAWANE YUZU candy'', etc. In addition, in collaboration with craft beer companies in the prefecture, yuzu craft beer is also available.
"folk knot cafe STIR" develops products using yuzu peel after squeezing the juice from the yuzu fruit. By baking the skin in an oven to dry it or making it into syrup, it can be used to make sweets and drinks.
It is used in drinks such as ``Yuzu Soda,'' as well as baked goods such as ``Yuzu Ginger Granola,'' ``Yuzu Brandy Cake,'' and ``Yuzu Cookies.'' By the way, ``Yuzu Soda'' has a very good reputation for ``the rind is delicious,'' and there are many customers who say they want to buy the syrup. Since the cafe is run by two people, they are unable to sell yuzu syrup as a product due to manpower issues, but they hope to do so someday.
In addition, ``folk knot cafe STIR'' has partnered with ``Hibi no Yasai hajimari yuu,'' a farm in Kawanehon Town that grows a wide variety of naturally grown vegetables. Because vegetables are grown naturally without using pesticides, they are often eaten by insects.
Because the production volume is not stable, we buy surplus vegetables that are difficult to sell as products, thinned vegetables, vegetables with hard skins, and vegetables that are eaten by insects, and use them in the cafe's meal menu. There are many unusual vegetables such as square beans and yacon, which are said to please customers because of their appearance.
Dishes using wild game such as wild boar and deer from Kawanehoncho are also popular. Roast deer meat and boar stew (boar stew, available only at openings, etc.) are popular menu items at the cafe. By the way, we are currently developing a menu of roasted wild boar. Since the amount of wild game caught is small, it may appear on limited menus.
The game will be delivered to you by Kunikichi Tonooka, a local hunter. He is a hunter who places great importance on speed in processing, and he quickly removes blood before it becomes fishy. By thoroughly processing the fascia, we prepare it so that it is easy to use at home. Mr. Tonooka's meat is really delicious and doesn't have a fishy smell. Roasted venison is as delicious as roasted beef. No wonder it's popular at cafes.
Attracted by Mr. Tonooka's skills as a hunter, three female hunter apprentices in their 20s recently became apprentices. Expectations are high for future gibier in Kawanehon Town.
Since there are many tea shops in Kawanehoncho, ``folk knot cafe STIR'' allows you to compare teas from various tea shops. In addition to green tea, there is also black tea, and you can freely drink two types of tea instead of cold tea. It is said that the number of people visiting the tea shop is increasing as a result of drinking at the cafe. Some of the products are sold at the cafe, but many people come here wanting to buy more.
``folk knot cafe STIR'' is located in Kawanehon Town and promotes the charm of Kawanehon Town from various aspects. Since many of our menus feature yuzu, we often get asked about yuzu by our customers, and when they do, we tell them, ``Kawamoto Town is a yuzu-producing area,'' and tell them about the charm of the town. It is said that there is. In addition, we actively open stores at events held across the country, and in addition to selling products made with Kawanehon Town's yuzu, we also bring Kawanehon Town's vegetables and other produce to the event. It is sold in
