Unique to Shizuoka! A series introducing famous restaurants that offer surprising menus using ingredients from around the world.
This time, we'd like to introduce you to a restaurant that uses ingredients from Shizuoka Prefecture for its ``canelé,'' which is gaining popularity again.
A canelé is a traditional French confectionery that is essentially simple and rustic, made by putting milk, butter, sugar, soft flour, eggs, etc. in a canelé mold and baking it in the open. It is characterized by being crispy on the outside and moist on the inside. "NANA-Canele" is a new type of canelé that combines local ingredients to create a new appeal.
At NANA-Canele, seven of the 20 flavors created through extensive research are randomly selected every day. One of the most interesting collaborations is a canelé made with amazake from Hakuin Masamune, a local sake produced by Takashima Sake Brewery in Numazu City. Amazake, made only from local sake koji and water, is kneaded into the dough, creating a unique aroma and sweetness.
Mr. Hanai, who opened the store, is a big fan of canelés and has eaten them from all over the country. On the other hand, she doesn't like alcohol and has avoided it until now, but as she researched canelés, she thought that amazake might be a good match, so she turned her attention to Shizuoka's local sake. It is said that the amazake of this ``Hakuin Masamune'' was delicious to drink, so it was commercialized.
``Through these ``Hakuin Masamune Amazake'' canelés, we have heard from people who have learned about Hakuin Masamune and who have actually purchased Amazake. It is precisely because we have such customers that we continue to develop new flavors and collaborations. Ideas come to me," says Hanai.
In addition, NANA-Canele's fruit-based flavors are also popular. ``Strawberry Canelé'' uses ``Benihoppe'' from ``Matsushita Farm'' in Izunokuni City, and ``Blueberry Canelé'' uses blueberries from Mr. Oba, who also runs ``Blueberry Cafe Nagomi'' in Susono City. . Mr. Hanai personally goes to pick each fruit and makes jam at the store.
In addition, Jutaro mandarin oranges, which are known for their fresh, fruity sweetness, are purchased from contracted farmers and processed into marmalade. In both cases, the paste is kneaded into the dough itself to create a canelé with a fruity taste.
In fact, canelé is a sweet that has a low success rate. The finished product is greatly affected by the temperature and humidity of the day, the temperature of the oven, and the condition of the mold used, so when the company first opened, even if they made 100 pieces, only a few were of quality that could be sold in stores. It seems that there was also.
"At Nana Canelé, we knead different ingredients into all 20 types of dough. Not only the amount of ingredients, but also the moisture content and ingredients are not the same, and there are days when it doesn't work even if you make it according to the recipe. However, I didn't want to focus on photogenicity by just putting Shizuoka ingredients on top of the canelé.I didn't want to create a canelé that looked great in photos, but rather a standard flavor that you would have to try if you came here. I wanted to create a ``canelé.'' After eating canelés all over the country, I realized the deliciousness of Shizuoka's ingredients.I want to continue expressing this.''
"NANA-Canele" now receives orders from all over the country. In addition to pre-order sales, they also actively engage with the local community by creating event-limited flavors and collaborating with local companies to create original canelés.
By the way, they are currently developing new products that use Shizuoka ingredients, including milk and eggs. I would like to continue to pay attention to the possibilities of Shizuoka that are packed tightly into the sweet canelé.■ Store information
