Japanese
"Kouhaku Namasu," an indispensable part of New Year's osechi cuisine, is known as a sweet and sour dish seasoned with vinegar and sugar.
However, in Fujinomiya City, Fuji City, and the surrounding eastern regions, where peanuts are a specialty, red and white namasu, which contains ground roasted peanuts, is common.
The addition of ground peanuts reduces the sourness of the namasu, and the richness of the peanuts gives it a lingering flavor, making it easy to eat even for people who don't like vinegared dishes.
Another popular way of eating peanuts is to boil them in the shell and then peel them before eating. This is a way of eating peanuts that is unique to this area and is loved by locals.
Although it is a New Year's dish, it is easy to prepare and is made at home on a daily basis.
Ingredients used
Radish, carrots, roasted peanuts
How to eat
After shredding the daikon and carrots, add a pinch of salt and squeeze until just the liquid is gone. Grind the peanuts in a mortar, add the mixture of vinegar, sugar and salt, and grind until the peanuts release their fat. Mix with the squeezed daikon and carrots.
