"Tamago Fuwa Fuwa" is a dish that was served in Fukuroi-juku during the Edo period, and has been recreated and revived by the Fukuroi City Tourism Association as a new local specialty.
According to the Edo period document "Sendai Gemuka Nikki," it was served as breakfast to guests at the Otawaki Honjin in Fukuroi-juku.
The only ingredients needed are eggs and stock, and the resulting fluffy, flavorful, foamy texture is a delight to enjoy.

How to eat
Add salt, light soy sauce, and pepper to the stock to make a clear soup, then divide it into two.
On the other hand, the clear soup is cooked in a pot with the lid on.
To the other clear soup, add the eggs and mirin and mix well with a whisk until creamy.
When the clear soup in a pot comes to a boil, turn off the heat, pour in the creamy whipped eggs all at once, cover and leave to steam.
