Fukuroi
Shojin ryori refers to cuisine that avoids killing life and stimulating earthly desires, and is essential for the mental and physical refinement of monks. Without using any meat or fish, each dish is carefully prepared, such as simmered dishes made with kelp and shiitake mushrooms, and sesame tofu that has been kneaded for 1 to 2 hours. There are also ``Botanzen'' which comes with botamochi (bota mochi) and ``Yurizen'' which uses lily root, which can be enjoyed only seasonally.
