Method
Peel the carrots and cut them into 5cm rounds, then cut them into strips using a cheese grater (the surface will be rough and the flavor will absorb easily. You can also cut them into thin strips with a knife).
Wash ❶, drain, and thoroughly remove moisture with paper towels (it's a good idea to sprinkle a little salt (not listed) to draw out the moisture).
Combine white wine vinegar, honey, orange juice, and olive oil in a bowl and season with salt and pepper.
Add the carrots from ❷ to this, mix, and let the flavors meld in the refrigerator (about 15 minutes).
Spread a mixture of grain mustard and butter on a square piece of bread, then lightly toss the carrot lapé with walnuts and cheese and sandwich a generous amount between the pieces of bread. Cut and serve.

It's delicious if you remove enough moisture from the carrots before tossing them (you can adjust the sourness to your liking).
