Aroma melon (greenhouse melon)

Greenhouse melon summer sweets

Ingredients (For 4 people)

Aroma melon (greenhouse melon) 1 individual
peach 2 in
fruit sauce 1 tablespoons
chervil a little
A panna cotta
Fresh cream pure 22% 180 tsp
milk 200 tsp
Granulated sugar 46g
gelatin 5g
Wed 50 tsp
B Melon jelly
Wed 250cc (50cc+200cc)
Melon liqueur (melon juice) 2 tablespoons
Granulated sugar 40g
gelatin 5g

Method

Add 50 cc of water to gelatin A and B and rehydrate.

Mix the fresh cream from A, milk, and granulated sugar, stop just before it boils, add gelatin, and strain the mixture with a whisk. Divide into 4 equal portions into pudding cups, cool with ice water, and chill in the refrigerator for 20 minutes to complete the panna cotta.

Add granulated sugar to 200cc of water from B and heat to dissolve.

Add gelatin from B to ❸, strain and remove heat with ice water. Add melon liqueur to complete the melon jelly.

Cut the melon in half and scoop out the flesh with a spoon.

Place ❷ and ❹ in a bowl, top with the cut fruit, and top with fruit sauce. Garnish with herbs such as chervil and serve.

Key Points

Adding seasonal fruits such as watermelon and cherries will add color. In ❷, be careful as it will separate if it boils.
