Maruko tea
Milk tea sorbet using Maruko black tea from Shizuoka Prefecture

Ingredients (For 10 people)
Maruko tea | 5g |
honey | 100g |
milk | 200 tsp |
Fresh cream | 100 tsp |
Method
Boil 300cc of water, add Maruko black tea to a warmed teapot, pour boiling water over, and brew black tea for about 3 minutes.
Put the honey in a large bowl, add the black tea from ❶ on top and mix well.
Add milk and fresh cream to ❷ and mix well.
Place ❸ in a metal or glass container, and once it has cooled down, put it in the freezer. Take it out every hour or so and mix well with a fork or spoon. When it solidifies, mix well with a fork again. Chill for about 1 hours.
Key Points
To make black tea, boil water, then pour in the hot water as soon as it boils. Extract deeply. When it hardens in the freezer, the honey will sink to the bottom, so mix it well.
