Ingredients (For 4 people)

Salad onion (white onion) 2 individual
Wheat flour 2 tablespoons
Curry powder 1 tsp
salt 1 tsp
Fried oil Appropriate amount
Baby leaf 100g
radish 2 individual
Fennel 2 shares
Italian parsley 1 shares
edible flowers As appropriate
 green sauce
Dashi soy sauce Appropriate amount
Olive oil 1 tsp
salt 2 tsp
pepper a little

Method

Cut the top and root of the white onion, and use a knife to cut into 1-6 equal pieces lengthwise, leaving about 8 cm of the bottom part intact.

Add 1 teaspoon of salt to boiling water, place ❶ on a mesh rack, boil for about 1 minute, then soak in ice water for 3 minutes.

Make green sauce. Quickly boil the green onions you cut in step ❶, dry fry them in a frying pan, add dashi soy sauce, the same amount of boiled water, olive oil, salt, and pepper, and add to a blender.

Remove the moisture from ❷ and evenly sprinkle the mixed flour and curry powder. Fry in oil at 170 degrees to avoid burning.

Arrange radishes, baby leaves, fennel, Italian parsley, and edible flowers on ❹, garnish with ❸, and serve.

Key Points

・If you widen the cut side of the white onion with chopsticks or lift it out of the oil several times, it will fry beautifully.

・You can also use parsley instead of green onions.
