Matsuzaki mulberry leaf tea
Matsuzaki Soba tea soufflé cheesecake

Ingredients (17 cake molds (length 8cm x width 6cm x height 2cm))
Matsuzaki mulberry leaf tea | 10g |
Cream cheese | 200g |
Granulated sugar | 70g |
Egg yolk (M egg) | 3 piece |
Egg white (M egg) | 3 piece |
Unsalted butter | 30g |
Fresh cream (45% milk fat) | 100g |
Flour | 40g |
White chocolate | 15g |
Commercially available sponge cake (approximately 1cm thick at the bottom of the cake mold) | Appropriate amount |
Apricot jam | 7g |
Sugar powder | 8g |
Method
Add 30g of granulated sugar to room temperature cream cheese and mix with a whisk until it becomes glossy.
Heat the pot containing the cream, white chocolate, and butter over low heat until the chocolate and butter melt.
Add egg yolks to ❶ and mix (add one at a time and mix while watching the process)
Add 6g of Matsuzaki mulberry tea to ❷, mix gently and strain through a mesh. Add to ❸ and mix thoroughly.
Put egg whites and 40g of granulated sugar in a container and mix with a mixer until it becomes meringue-like.
Add the soft flour to ❹ and mix thoroughly, then mix in ❺ in two parts.
Line a cake mold with parchment paper, put the sponge cake in the bottom, pour in ❻, then place the mold in a vat filled with hot water and bake in an oven at 150℃ for about 40 minutes. Then raise the temperature to 160℃ and heat for 10 to 15 minutes to brown the surface.
After removing ❼ from the mold, brush the top with apricot jam (preheated in a pan).
Finally sprinkle 4g of Matsuzaki mulberry leaf tea and powdered sugar and it's done!
