Founded in 53 as a sushi restaurant.
Nowadays, we mainly use local specialties such as sakura shrimp and whitebait, and many customers come from outside the prefecture. During the new tea season, we have started an initiative to bring in tea leaves picked from the tea fields and fry them with cherry shrimp.
We started our Halal initiative a few years ago, and our ``Sakura Shrimp Kakiage Don'' is popular with people overseas as well.

One year after their marriage, they opened ``Sushidokoro Yamashichi''. Three years later, she received her chef's license.
She attended Tsujidome, which is famous for tea kaiseki, and later went on to attend Kazuko Goto and kaiseki restaurant Nishibori to learn the basics of Japanese cuisine. He also works hard at visiting sake breweries and studying wine.
I have been doing the tea ceremony as a hobby for over 20 years. She is currently studying Shizuoka tea.

Sushidokoro Yamashichi is located in Kambara-juku on the Tokaido road and is visited by many foreign tourists as it serves Halal food.

Mr. Yamazaki's efforts go beyond just the store, collaborating with the local community to utilize Shizuoka ingredients that have not been widely used in the past. That momentum has not stopped even during the coronavirus pandemic. In 2020, Yamazaki used his free time during the coronavirus pandemic to visit tea farmers and experience tea making. In addition to obtaining the qualification of a Japanese tea advisor, she is proposing a new way to enjoy tea by collecting kimono sashes depicting post stations on the Tokaido route and pasting them on tea boxes and tumblers.

In addition, in cooperation with the Shizuoka Prefecture Tourism Association, a project was held in which influencers from overseas were invited to serve hand-rolled sushi using ingredients such as Mt. Fuji salmon, sakura shrimp, whitebait, local tea, and wasabi. ``Shizuoka has a lot of charm.Of course, we want you to enjoy delicious food, but we also want to offer other ways to enjoy your meal,'' says Yamazaki.

The activities for local children are also interesting. Recently, there are many local children who have never eaten sakura shrimp, so we have been holding classes to help them learn about sakura shrimp. Afterwards, the students took dried cherry shrimp, shaved sardines, and other items to Tokyo, where they went on a school trip, and distributed them at Ueno Park. This activity has been going on for about 10 years. (In 2020, it was distributed to staff at accommodations due to the effects of the new coronavirus). Food-related activities like this are developed together with local people and serve as an opportunity for school personnel, children, and their parents to become interested in the local area.

What's amazing about Mr. Yamazaki is that he generously shares the recipes he devised with the people around him. ``As a worker, I want to propose food that anyone can enjoy,'' says Mr. Yamazaki with a laugh. He can't take his eyes off his endless ideas and ability to take action.

 


An event where sushi is served to foreign tourists. The bottom of the glass features Mt. Fuji, and both cold and hot green tea are available. Yamazaki's style of hospitality is all about making a little effort.
