This restaurant's ``Fuji no Kuni Capital of Food Craftsmen''

He began his training in Osaka and worked at a Japanese restaurant in a high-class hotel. After that, he gained connections with Hamamatsu and worked at the current restaurant of Hamamatsu Meitetsu Hotel, the predecessor of Hotel Crown Palais Hamamatsu, and after the renovation, he became the head chef in 2011. Since then, he has been serving authentic Japanese cuisine that makes use of delicacies from the mountains and seas of Enshu and local ingredients. He mixes traditional techniques with new ideas to create seasonal delicacies.
