Ichikawa Iwao
Born in 1975 in Shizuoka City (formerly Shimizu City). After graduating from high school, he trained at Japanese restaurants such as ``Ayame'' in Fuji City and learned how to cook authentically. Afterwards, he learned business management at his mother's izakaya, and opened Iwao at the age of 50. He has developed a style of providing high-quality ingredients such as puffer fish, soft-shelled turtle, and eel with reliable techniques at affordable prices. He is an evangelist of authentic Japanese cuisine and a pioneer of creative cuisine that promotes local production for local consumption.
