While leading bread, cake and cooking classes since 1997, he has also been working at restaurants and hotels, and opened an Italian restaurant in 2009, which he continues to do today.
We are committed to providing Mamma's homemade food and gentle hospitality. She is a MediChef professional who specializes in food and medicine. In 2022, he was awarded the Fujinokuni Maestro Chef award.

There is a license called MediChef certified by the Japan Medical Food Promotion Association. We use our medical and nutritional knowledge to develop and provide "delicious and healthy food." Eriko Sasamata, who has already obtained the qualification, became the first to receive her highest qualification, ``MediChef Pro'' in 2022. One of her masterpieces is ``Mt. Fuji Smart Course.'' It's a full course meal based on local cuisine from all over Italy, with a focus on local ingredients. The total energy is 1kcal. A typical course meal has around 585.1kcal, so I kept it to just over a third. Moreover, it has excellent nutritional balance and only contains 1,500g of salt. What is noteworthy is that Rosato fans are raving about how delicious it is. Furthermore, in the same year, she received the highest award, three stars, in the Smart Meal certification system based on the standards of the Ministry of Health, Labor and Welfare. This is also a great feat achieved with thin arms.

We regularly hold ``healthy menu dinner parties'' inviting attending doctors and patients with diabetes, and continue to try to encourage them with ``delicious healthy food.'' The reason he devotes himself to these activities while managing the store is simply because he has realized that ``no matter what I do, I have to be healthy.'' When I reflected on my desire to continue working in good health with each of my customers, I became convinced that my mission was to create food that was both delicious and healthy. Originally from Akita Prefecture.
