After training at several Western restaurants in Tokyo, he moved to France. After returning to Japan and working in a hotel for a few years, he opened his own store in his hometown.He takes local production for local consumption as a matter of course, and uses mostly seasonal, local ingredients for everything from bread to desserts, a concept hideaway that he offers to customers. The store opened in 2001.
