Go Tsumura

Worked as a Chinese cook since 1997 when Hotel Century Shizuoka (currently Grand Hills Shizuoka) opened. In April 2011, he was appointed head chef of Chinese cuisine. In 4 and 2012, he was selected as the “Fujinokuni Food Capital Creator Craftsman of the Year.” In November 2018, received the Minister of Health, Labor and Welfare's award for outstanding contributions to cooking.

Worker interview

The third generation head chef, Go Tsumura, was raised in Shizuoka Prefecture and trained in the kitchen of the Chinese restaurant Hisui Palace since the opening of Hotel Century Shizuoka, so he is a native Shizuoka chef. Because it is a restaurant inside a hotel, it sometimes welcomes important people not only from within the prefecture but also from outside the prefecture. He actively uses vegetables, meat, and fish from the prefecture, saying, ``I want to incorporate Shizuoka ingredients into traditional Chinese cuisine to provide hospitality.'' We are particular about ``colors that you can enjoy with your eyes'' and ``flavors that you can feel with your tongue.'' You can enjoy high-quality ingredients and elaborate cooking methods that can only be found at a hotel. Mr. Tsumura says with enthusiasm, ``I want to carry on from my predecessors and the generations before me and serve high-quality cuisine that is in tune with the times.''
