Takayuki Nagano

Born in Yaizu City in 53. After graduating from confectionery school, he trained at hotels inside and outside the prefecture. In 23, he opened "Patisserie Goute" in Yaizu City.
He teaches classes at schools as a lecturer, and also participates in product development for student projects and menu creation for companies.

Worker interview

Patisserie Goute creates and sells sophisticated Western sweets in Yaizu, which has a strong image of a fishing industry. The cake exudes high-quality adult elegance, and in order to take advantage of the characteristics of the ingredients, there is no extra fragrance or extravagant decoration, and the cake is modestly sweet. It has a sense of depth and dignity in its modern, urban design.

As owner and pastry chef Takayuki Nagano says, ``We want people who are reluctant to eat cake to try it,'' and men who don't like sweets are among the repeat customers of the shop's Western sweets. The taste respects the sense of season and the umami of the ingredients, and many of them go well with alcoholic beverages, and there are also some masterpieces that pair perfectly with wine or brandy.

However, on the other hand, all Western sweets are made so that no alcohol remains, so children can eat them without any worries. They also grow their own berries and herbs. The inside of the store has a well-defined space that gives you a sense of adult quality. We also recommend the approximately 20 types of baked sweets displayed at the store.

 


``Amela Tomato Jelly'' is a delicious tomato-filled dish that appears from May to September. The refreshing acidity and sweetness make it feel like an adult sweet.
