Mr. Goto, who serves as the head chef, is also actively working on the SDGs (Sustainable Development Goals). Vegetables are purchased directly from small-scale contracted farms that cultivate crops close to nature, and seafood is sourced from Maisaka Fishing Port on the same day. Not only does it have less environmental impact, but it is also much fresher and tastes better.
