Owner and chef of the new Chinese restaurant "Mulan". After graduating from culinary school, he entered the apparel industry to hone his sense. From the age of 19, he traveled around India and Southeast Asia for about a year. After experiencing authentic Chinese cuisine in Chinatowns in each country, he decided to pursue a career in Chinese cuisine. After returning to Japan, he trained at a Chinese restaurant in his hometown of Hamamatsu before going independent. Since opening, he has been serving Chinese cuisine that makes the most of the depth of spices and fresh local ingredients. He still visits China frequently, and his curiosity is endless as he continues to learn about local flavors and techniques. Since 1, he has served as chairman of the "Hamamatsu Mitsuboshi Kai," which aims to promote food research and local production and consumption. He pursues cooking methods that bring out the best in ingredients, such as oysters from Lake Hamana and local strawberry farms, while repeatedly talking to producers. He is also committed to developing the local food culture through cooking.

Worker interview

When you hear Sichuan cuisine, you may first think of "spicy". However, its essence lies in the deep umami and complex flavors created by the seven tastes of numbing, salty, sour, fragrant, bitter, sweet, and spicy. At the New Chinese Restaurant "Mulan", they cherish the charm of Sichuan cuisine and use plenty of rich ingredients from Shizuoka. Vegetables and seafood grown in the sea, mountains, lakes, and rivers meet with fragrant spices to create a unique taste. The aroma that spreads in the spiciness, the rich umami, and the sweetness and bitterness of the ingredients themselves. If you taste the food at Mulan, you will be able to experience the depth of Sichuan cuisine that goes beyond mere "spiciness". When you visit the restaurant, you can see Uchida approaching the customers and talking happily about ingredients and cooking methods. He says that people who are interested in "Chinese food they have never tried before" talk to him. Such moments are also part of the charm of this restaurant. The restaurant has over 1200 bottles of wine, and the marriage of spicy Sichuan cuisine and red wine is truly a blissful moment. "I want to deliver the pleasure, joy, surprise, and excitement of eating," says Uchida, whose challenge will continue in the future.

 

 

One of the main dishes at Mulan Lunch is "Shizuoka delicious chicken with yakitori sauce."

The rich and sweet Shizuoka chicken is surrounded by dishes made with locally grown king oyster mushrooms and petit vert.
