He started working in nursing care food in his late 20s while working at a restaurant in Hamamatsu. After working as a hotel executive chef and other positions, he opened his dream restaurant, Fureai Restaurant Shoraku Kobo, at the age of 57. While attracting many fans from all over Japan, he also energetically teaches cooking at hospitals and facilities, and teaches cooking classes at schools.

Worker interview

Furukawa first encountered nursing care food when he was asked by a local government to provide cooking services to nursing care residents. He felt that the food had no color or flavor, and although it had enough nutrients as food, it lacked the element of cooking.

After much research, the result was a care meal that is visually beautiful. The food served on the plate has the same freshness and deliciousness as regular meals, both in terms of ingredients and seasoning. However, it takes several times more time and effort to prepare. For example, croquettes are made by coating the food in batter and deep frying it, then putting it through a mixer and solidifying it with jelly. This is said to give the croquettes their fluffy texture.

The result of this inquisitiveness and ingenuity was the opening of Fureai Restaurant Shoraku Kobo. Nowadays, the nursing care version is priced at an extra 550 yen (tax included), but the fact that it was the same price until a few years ago shows Furuya's spirit. Attracted by the taste and kindness, fans from all over Japan visit every day. The restaurant also caters to individuals with chewing difficulties and gastrostomy tubes. It is also the first restaurant in Japan to offer nursing care French cuisine. It is filled with Furuya's wish to "see the happy smiles of many people through cooking." It is truly happy food that is kind to the body.
