This restaurant's ``Fuji no Kuni Capital of Food Craftsmen''

Trained at hotels outside the prefecture. In order to promote the quality of ingredients in our hometown of Shizuoka, we work closely with producers, actively incorporate ingredients, and strive every day to bring out the best in ingredients. As the number of inbound foreign tourists increases, we would like to promote Shizuoka's ingredients not only within and outside the prefecture, but also to the world.

``Buffet Restaurant Fujisan'' promotes local production for local consumption, and serves dishes using fresh vegetables from Fujinomiya. ``Vegetables, fish, everything you can get in Fujinomiya is gathered here, so it's called ``Fujinomiya's Toyosu Market,'' Yamanaka says with a smile. In addition to a wide variety of local vegetables, you can also get rainbow trout and char. Being able to cook these ingredients while they are still extremely fresh is said to be a great skill. Hearing the real voices of the producers creates a passion for ``so that everyone can enjoy every bit of the deliciousness.'' In recent years, I have developed a strong desire to support producers. ``Some producers have been forced to close their businesses due to the effects of the coronavirus.It may be difficult to do it all by yourself, but by using your cooking skills, you can increase the richness and deliciousness of Fujinomiya's food.'' I hope I can help by conveying this to as many people as possible." Mr. Yamanaka's love for his hometown will never end.

 

``Rainbow trout carpaccio'' made with rainbow trout grown in the spring water of Mt. Fuji.

Served with rainbow trout salmon roe and seasonal vegetables and fruits.

On this day, I used strawberries, red radish, and herbs.

 

Feed that has been processed into yogurt-like form using our unique fermentation technology.

``Asagiri Yogur Pig Roast'' is made using Asagiri Yogur Pig.

The muscle fibers are thin and soft, so the sweetness of the fat stands out.
