Hiroshi Sugiyama

Born in Hamamatsu City. Since he was in junior high school, she has dreamed of becoming a chef. After she graduated from Osaka Abenotsuji Culinary School, she joined Hotel Concorde Hamamatsu. In 2014, she received the Disciple of the Japan Escoffier Association. She was appointed as the head chef of Concorde Hamamatsu in 2021 after training at the Hamamatsu Country Club Restaurant, the head chef of Concorde Hamamatsu Western Cuisine, and the two-star French restaurant Les Crayères. Her quest to please her guests is endless, not only with the taste, but also with presentation, color, and cost performance.

The Hamamatsu/Lake Hamana region has a warm climate and is surrounded by rich nature such as the sea, mountains, and lakes. The table is decorated with seasonal ingredients, including approximately 170 agricultural products and 150 marine products. Breakfast and lunch buffets include miso soup made with seaweed from Lake Hamana that fills your mouth with the aroma of the ocean, a bowl of whitebait purchased from Maisaka Port, salad made with freshly harvested new onions and rich leaves, and vegetables grown in Hamamatsu. There are many sweets made with matcha. In recent years, they have also been active in collaborating menus with local food brands such as Unagiimo, Nagasaka Bee Farm, and Woodberry Farm. The buffet, where you can enjoy a variety of seasonal ingredients, is the perfect way to enjoy local cuisine. ``I visit production areas because I want to hear the thoughts of the producers and convey their charm through the food.I enjoy encountering new ingredients and connecting with new producers,'' says the head chef. Taking advantage of the hotel's characteristics that many people visit from inside and outside the prefecture, we will continue to convey the delicacies of Enshu and Shizuoka today.
