Miho Ohshima
Originally from Kanagawa Prefecture, he majored in languages at university and aimed to become a translator, but was drawn to self-expression through cooking and decided to become a chef. He learned the basics of Japanese cuisine at a sushi restaurant, and then acquired Western cuisine techniques at Steak House Kanai. While working in the restaurant's operations, he discovered the appeal of ingredients from Shizuoka Prefecture, and is now committed to serving dishes that make use of organic vegetables from Kanai Farm, the restaurant's own farm. Currently, while working as a chef at Steak House Kanai, he is also actively involved in reducing food waste and developing menus that make use of local ingredients.

Chef Oshima values making the most of ingredients from Shizuoka Prefecture. The vegetables used in the restaurant are mainly pesticide-free vegetables grown at the restaurant's own farm, Kanai Farm, and are freshly picked that morning. The meat served is carefully selected local brand beef such as Enshu Yumesaki beef, Ashitaka beef, and Izu beef. He is also very interested in the food waste issue, and is also devising ways to utilize unused ingredients that are difficult to distribute in the market. He is also passionate about improving his skills as a chef, and is actively competing in national competitions for cooking and desserts. He says that by receiving professional evaluations, he improves his own skills and gets hints for serving better dishes. His high creativity in these efforts has been recognized, and he has been selected as an official creator of the chef platform Gronda, which originated in Austria, and is contributing to the movement to recognize cooking as art. Chef Oshima's attention to detail, passion, and fresh sense are packed into each dish, which incorporates not only cooking techniques but also artistic sensibilities.

The "Steak made with local beef" menu offers steaks made with carefully selected beef from Shizuoka Prefecture, such as Enshu Yumesaki beef, Ashitaka beef, and Izu beef, along with fresh, pesticide-free vegetables of the season.

Mount Omuro is a sacred place for the movie "Your Name."
Inspired by the comet and Mt. Omuroyama, which play important roles in the story, the desserts were created using Izu-grown Guriga tea and citrus fruits.
Based on the belief that "the greatest joy is to create dishes that impress our customers,"
They also offer desserts decorated with chocolate art for anniversaries.
