Worker interview

Yuki Nagashima, who runs Patissier N Talk, says, "It's a series of setbacks." The sweets industry is said to be difficult to run as a business because of its high cost rate, low productivity, and poor working conditions, but Nagashima's driving force is his passion to "change that situation, starting from Shizuoka."

Nagashima relies on a variety of ingredients from Shizuoka Prefecture. He uses Miru Shizu milk, which is essential for sweets, eggs from Lake Hamana, and also uses a lot of fruit from the prefecture. "Shizuoka has a stable climate, which allows for consistent quality of ingredients," says Nagashima, who takes advantage of the strength of being able to use fresh ingredients while they are still fresh. He also makes sure to have lively exchanges with producers. He always meets and talks with producers before making a deal, and he places importance on personality as well as taste and quality. "By joining forces with people you can trust, you can create sweets that please customers and realize a win-win-win business," says Nagashima.

They are currently working on a B2B business that leverages the deliciousness of their handmade sweets. They are already delivering cream puffs to the factories and offices of major home appliance manufacturers as part of their employee benefits, and have also begun supplying products to major Japanese distribution companies. While actively involved in a variety of business negotiations, they are also committed to contributing to the local community, such as by becoming a partner of a professional sports team in the prefecture. By successfully completing these new ventures, they are paving the way for the future of sweets shops.
