Takamasa Tsuboi

Originally from Shizuoka City. Born into a family of restaurant owners, he watched his father, the founder of Tsubaki-tei, work from an early age and decided to follow this path. After graduating from high school, he trained for five years at Kobe Kitcho in Osaka and another five at the Ginza main store of Tokyo Kitcho, and now both father and son are working at their family restaurant, Tsubaki-tei. During this time, he has acquired qualifications including a fugu chef's license, a SAKE DIPLOMA certified by the Japan Sommelier Association, and a Japanese tea instructor, all of which he holds to this day.

Worker interview

Takamasa Tsuboi, the second-generation owner of the Japanese restaurant Tsubaki-tei, has made the preservation and transmission of local food culture his work's theme. A dish that could be said to symbolize this is "Tororo Soup made with wild yam." Tororo soup is made by rubbing wild yam dug up from the mountains in a rice cooker and diluting it with miso soup, and is one of the most famous Tokaido specialties that appears in the famous Yajikita Travelogue.

It is very difficult to procure wild yam, but the rich flavor makes up for the hardship. Rooted in the rugged mountains and slowly growing for 10 to 20 years, the rich flavor that spreads in the mouth is incomparable to that of cultivated wild yam. Of course, it is also rich in nutrients. That is why Tsubakitei is committed to using only natural ingredients.

The restaurant has nine rooms, ranging from small private rooms to a large hall, and the shelves in the corridors are decorated with antique calligraphy, paintings, hanging scrolls and other furnishings, as well as flowers arranged by the proprietress. Anticipating the seasonal atmosphere, the restaurant is like a stage, and is used not only for business dinners, but also for special occasions and anniversaries such as the first meal, Shichigosan and Hinamatsuri. The restaurant also regularly holds events such as "Japanese food etiquette classes," "lectures and dinners on special occasion food," and "matchmaking events where you can learn Japanese table manners." Chef Tsuboi Takamasa is inspired by his sense of mission to protect and nurture the local food culture, and ultimately the fine traditions and customs of Japan.

 

"Tororo soup made with wild yam." Wild yam is procured from a digger in Ryogouchi, Shimizu Ward, and served with white miso and bonito stock. The rich, wild flavor of the wild yam is exquisite.

 

 

"Takiawase" is a dish made with seasonal local ingredients throughout the year. The photo shows a dish made with shrimp potatoes from Iwata. Each dish is presented in a beautiful dish that brings out its appearance.
