This restaurant's ``Fuji no Kuni Capital of Food Craftsmen''

Shintaro Nagasawa
Born in Mishima City in 1978, Kobayashi became very conscious of the importance of food after he fell ill while living alone as a student. He then trained in a variety of restaurants in Tokyo, including bars, yakitori restaurants, Asian dining, izakayas, and sushi restaurants. However, he had doubts about the current state of food production and distribution, so in 2006 he returned to his hometown of Mishima and opened "Hata Gohan Aguri." He is working hard to develop a food culture rooted in the local area, aiming for the sixth industrialization of the industry by utilizing organic vegetables, centered on his own farm, Kobayashi Farm.
Worker interview
"Food creates life." Nagasawa's culinary philosophy was nurtured by the illness he experienced in his youth. Based on his belief that "I want to use really good ingredients and use simple cooking methods to bring out the natural flavor of the ingredients," "Hata Gohan Aguri" serves dishes that make use of organic vegetables grown in the restaurant's own farm and local ingredients. The food at this restaurant is not just a meal, but an attempt to promote health and revitalize the local area through food. The signature menu item, the "Agri Rice Set," changes depending on the harvest at the time, and by using the most suitable cooking method for the ingredients, the appeal of the flavor is maximized. Nagasawa has also been reviewing the very nature of the food service industry and working on work style reform, saying, "I want to pursue sustainable agriculture and the food service industry and revitalize the local area through food." "I believe in the power of ingredients and create new value together with producers." With this desire in mind, he continues to move between the fields and the kitchen today, looking to the future of food and continuing to walk with the local community.
The "Agri Rice Set" allows you to choose between meat or fish as the main dish, and the price varies depending on your choice.
The plate includes miso soup, small bowls of seasonal vegetables, salad, and more, allowing you to enjoy more than 1 types of seasonal vegetables on one plate.
The "daily cakes" include carrot cake made with Mishima carrots and are made using wheat from Shizuoka Prefecture and freshly laid eggs by Sugisawa.
The "handmade ice cream" uses seasonal fruits, such as strawberries from Nirayama, Izu.
The interior of the store has a natural feel and is spacious.
The store also sells the seasonings and local ingredients used in the cooking.
