This restaurant's ``Fuji no Kuni Capital of Food Craftsmen''

Daisuke Wada
Born and raised in Kikugawa City. He started making handmade soba noodles as a hobby in his 20s and was fascinated by its depth. Influenced by Sawaki Kotaro's "Midnight Express," he traveled abroad as a backpacker and experienced various food cultures. After returning to Japan, he decided to pursue soba in earnest and became an apprentice at "Nihonbashi Sobanoji." After a year of training, he renovated the store run by his mother and opened a new shop called "Daidai." The name of the shop expresses his wish to "make it a store that will continue for generations." The soba soup has a strong Kanto-style soy sauce flavor, and the thin, smooth soba noodles are characteristic. The tempura is made using vegetables and seafood from Shizuoka Prefecture, and the ingenuity used to bring out the flavor and texture of the ingredients is outstanding. He also participates in activities such as "Fujinokuni Seasonal Eating All Association" and "Kikugawa Gastronomy Tourism," and is never-ending in his exploration of the local food culture.
Worker interview
Located in a residential area, Daidai is known for its soba noodles and tempura made with local ingredients. In spring, butterbur sprouts and asparagus, in summer, corn and broad beans, in autumn, shiitake and matsutake mushrooms, and in winter, swordfish and tilefish, all come to the table. "I want to show people that the ingredients we eat every day can be made so delicious by cooking them as tempura," says Wada. Broccoli, which is often thought of as a side dish, is transformed into a main dish by deep-frying it, with its crispy texture and sweetness. The potatoes are aged for about a year to bring out the maximum sweetness before being used. The oil used is a 1:7 blend of corn oil, which makes the dish crispy, and sesame oil, which creates a fragrant and rich flavor. They also pay particular attention to temperature control, and after the batter on the sweet potatoes is hardened at high temperature, they are deep-fried at low temperature for two hours. In addition, the soba is packed with the bounty of Shizuoka, such as "Negi Soba" topped with leeks fried in duck oil, "Hanamaki Soba" made with green laver from Lake Hamana, and Utogi wasabi. 3 years after opening, he laughs and says, "I'm still halfway there." "I want to be active for the rest of my life. I hope to be able to convey the depth of food while having leisurely conversations with customers," he continues. The challenge of delivering the taste of Shizuoka through soba and tempura will continue.
