Originally from Aomori Prefecture, after graduating from Shinjuku Culinary Institute (then Kamo Gakuen), he worked in the Western-style cooking department at Nissei Nihondaira Hotel (then Nissei Hotel), before working as a full-time instructor at Suzuki Gakuen Central Culinary and Confectionery College Shizuoka Branch, and currently works as the general manager of the product development department at the marketing headquarters of Tenjinya Co., Ltd., where he is involved in developing menus for sale at around 30 stores. He is qualified as a chef, professional chef (Western cuisine), cooking technician, cooking technique instructor, care food instructor at the National Culinary Vocational Training Association, and professional cooking food education promoter.

"If you are forced to live in evacuation shelters due to natural disasters, how much strength would a bowl of warm miso soup give you?" says Kazuhito Nakayama. Food is a source of power. He says this feeling is the origin of his career as a chef. He also focuses on the importance of home cooking, as meals at home are very important in deepening family bonds.
One product that has been commercialized through a collaboration between industry, academia, and government is the "Kanaeru Bento." It is a bento that meets the standards of the "Shizuoka Healthy Side Dish" set by Shizuoka Prefecture, and it goes without saying that it uses ingredients from the prefecture.
The Shizuoka Osechi Set, which is filled with Shizuoka specialties, is also worthy of special mention. It includes spiny lobster from Minamiizu, salmon from Mt. Fuji, thick omelet made with bonito from Yaizu Port, shiitake mushrooms from Okusu, and even wasabi, vegetables, and tea, all of which are locally produced. "We were able to gather so many local products from within the prefecture because the senior members of Tenjinya treasured their connections with producers and continued to work with them," says Nakayama.
Shizuoka Prefecture is rich in food ingredients, but the reality is that most of the food is shipped to areas with high demand, such as the Tokyo metropolitan area. However, we want more people, both inside and outside the prefecture, to know about the unique food culture of Shizuoka Prefecture, such as grated yam soup and Shizuoka oden, which are all close to home.
