[Japan's Treasure Award Winner]
"Umami Artisan Salt" won the Champion (Grand Prix) award in the Artisan's Wisdom category at the Japan Treasures World Championship.
At the Shizuoka competition on Wednesday, January 2024, 1, the product received the "Judges' Special Award," and after further refinement, it was awarded the "Runner-up Prize" in the Condiments/Sauces category at the national competition (JAPAN Grand Prix) held on Tuesday, February 17, 2024.
At the "Undiscovered Gems of Japan World Championship 2024 in Singapore" held on Friday, August 8, 23, the product won the "Artisan's Wisdom" category.
[Nippon Treasures Exhibited Items]
"Umami Artisan Salt" (the Blessings of Shutakasu Salt) is a delicious salt that is packed with umami flavor, made by utilizing salt that would previously have been discarded during the process of making salted bonito.
We find new value in ingredients that would otherwise be thrown away as Japanese treasures, and offer them as delicious dishes.
Not only can it be used as a dipping salt for meat and tempura, but by simply dissolving a small amount in hot water, you can easily enjoy authentic clear soup or stock that tastes like it was made by a professional chef.
[Tournament untold stories]
After the national competition, we got a ticket to the world competition to be held in Singapore, and we want people overseas to know about this product and try it.
I spent the last six months pondering how best to explain "Shutakasu" and whether this was a good thing to offer as a sample.
This product makes use of Japanese culture and traditions, as well as the regional characteristics of Shizuoka, and was only possible with ingredients from Shizuoka.
With a strong desire to spread this value overseas, we have been working on creating presentation materials and videos.
[Future aspirations]
Kaneoto Ishibashi Shoten was founded over 100 years ago, and I, Ishibashi Toshifumi, am the fourth generation owner who has inherited the traditions and techniques of the company.
We are proud of this history and technology, and would like to continue to spread the word about Kaneoto Ishibashi Shoten from Yaizu to the world while preserving our traditions.
