Eel with orange butter flavor

How to make
Boil the eel (2 liters of water in a pan), add 100 g of salt to the eel, cover it, and heat it over high heat.
When it boils, reduce the heat to very low, boil it slowly for 15 to 20 minutes, and remove it when it is cooked to the extent that the bamboo sticks pass through.
While boiling, grate the orange peel and put it in a bowl with salted butter.
Cut the boiled eel into slices of about 1 to 1.5 cm.
Fry ❹ in oil heated to 180-190 ℃ until it is lightly colored.
